WARNING: These are G.O.O.D!
My boys ask for these almost every day! I will link these to my healthy living blog, because they are full of good stuff...BUT I wanted to share them with my family blog readers for a change! I don't really post recipes on here, but thought I'd give it a try...ENJOY!
Move It Momma's Bananaberry Muffins
You'll Need:
2 cups whole wheat flour
2 tbs flaxseed meal
2 tsp baking powder
1/2 tsp salt
1 c sugar
1/3 margarine-softened
2 eggs
2 mashed, ripe bananas
1 tsp vanilla
1 c blueberries-fresh or frozen
Preheat oven to 350.
Mix all ingredients in bowl, stir in blueberries...batter will be thick.
Bake 20 minutes or until slightly browned.
I make 24 mini muffins and 6 regular with this recipe! They freeze perfectly, so as soon as they cool off, I put them in a freezer bag and we're set for the week :)
Then I thaw in microwave and my boys have a quick, nutritious breakfast!!
These go great with scrambled egg/egg whites too!
Serving Size: 1 large muffin, or 2-3 mini's

Thanks for sharing this recipe! They look fantastic! I love stuff I can freeze and thaw for grab and go breakfasts since I work out of the house. I am always so busy in the mornings that i have my coffee while I am getting ready but a lot of times I have to eat when I get to work...this would be the perfect thing to take with me!
Sounds yummy. I have all the ingredients on hand so I'm going to try these. Thanks for the tip on how well they freeze. That's my biggest problem.... I'll make something like muffins but we can't eat the entire pan in a couple of days and when I freeze them, they end up tasting like crap when I try to defrost and eat them at a later time. Drives me nuts! It's nice to know if ahead of time if something freezes well. :)
